Irish Stew with Lamb Slow Cooker Recipe

Well here are the recipes I have played around with.  When it comes to buying the meat get it from your local butcher it’s far nicer and significantly cheaper!  This is my version of cooking. The measurements aren’t exact, they are fill the pot to the top, so try it and add or remove a little as you fancy.

1lb chopped lamb neck
1lb ribs brown them in batches as I’m doing and slowly layer in slow cooker.
1 large onion roughly chopped
1 large leek finely sliced
3 carrots sliced
Some potatoes

Fill the gaps in between the lamb with enough of the onion, leek and carrot mix to make a flat surface, then the first layer of sliced potatoes go in, repeat and top with sliced cabbage. Top up to about 1 to 2 cm from top with a rich organic beef stock. Turn on the slow cooker, go to work come back and enjoy 🙂
