Meatballs in Tomato Sauce Recipe

The Tomato Sauce:

  • 1 onion and three garlic cloves blitzed up
  • 3 small onion as above
  • 2 sticks celery as above
  • Sweat off in pan in butter or coconut oil
  • Add in 1tbs mixed herbs
  • 2 tbs tomato purée
  • Cook until purée changes colour to more rich orangy colour
  • 2tbs red wine vinegar
  • 3 tbs maple syrup (you can use sugar but this or honey is less prone to spiking insulin as much)
  • Salt and pepper

For the balls you will need:

  • 1lb beef mince
  • 1lb pork mince
  • 2 eggs
  • 1 onion blitzed to extinction
  • 4 cloves garlic as above
  • 1 and half tbs mixed herb
  • Salt and pepper

Mix up  into small balls and brown off. When browned add to the sauce and slow cook in the oven Meatballs and tomato sauce 1 Meatballs and tomato sauce 2

Allow the tomato sauce to simmer on the stove

Blend up with hand blender, taste for seasoning and as required

Add your cooked meat balls and sling in oven (fan assist) for about 5 hours at 120 to 130 degrees

This is what it should like or thereabouts 😉 Serve on gnocchi or a sweet potatoe……. or whatever you fancy really 🙂
